  1. Oven to 400 degees.
  2. 1) Cook sausage in large skillet or wok. Saute onions in sausage. Drain grease and add 1/2 cup water. Add squash, zucchini and seasonings. Cook covered until squash is tender.
  3. 2) Smear butter on bottom and sides of 2 qt casserole dish. Arrange mushrooms in bottom. Top with cooked rice, then tomatoes. Arrange cheese on top.
  4. 3) Add cooked squash mixture over cheese. Top with seasoned bread crumbs.
  5. 4) Cook until bread crumbs are golden brown (about 20 minutes)
