Mom's Spanish Rice

"My mom would make this along with her stove-top meatloaf recipe. It is an easy rice dish. My mom would cook this in a special square white (with blue ornflowers) Corningware covered dish which does make a difference, but I have successfully made in in a regular covered saute pan."

  1. Put cut up bacon in pan and saute until it sarts to cook and release some oil. Add chopped onions and saute until translucent. Add rice and cook until rice is lightly toasted. Add tomato sauce and water,salt and pepper,lower heat to low. Sprinkle grated cheese on top, cover and let cook until all liquid is abosorbed. Fluff with fork and serve with some additional grated cheese sprinkled on top. I usually serve this as a side to my Mom's Stove-top Meatloaf.
