  1. Stir together garlic, balsamic vinegar, salt, pepper, and olive oil in a small bowl.
  2. Rub the paste all over the pork.
  3. If you like or have time, marinate overnight.
  4. If not, no worries, it will still be great!
  5. Grill preparation:
  6. Sear the tenderloin on all sides.
  7. Grill for about 20-30 minutes, rotating every 10 minutes, until internal temperature is 160 degrees.
  8. Let it rest before slicing.
  9. Oven preparation:
  10. Preheat oven to 400 degrees.
  11. Heat canola oil in a large heavy saute pan over medium-high heat.
  12. Add pork and brown all over, about 4 minutes.
  13. Transfer pan to oven.
  14. Roast pork, turning occasionally, until internal temperature is 160 degrees, about 20 minutes.
  15. Transfer pork to cutting board.
  16. Try to let it rest for at least 20 minutes before slicing.
