  1. Heat a frying pan until drops of water "dance". Put dry ingredients in a small bowl, then add wet ingredients and mix thoroughly. Put 1/2 t. coconut oil in pan and spread around with a spatula. Pour batter into pan, cook and turn when bottom of pancake is a light golden brown. Makes 1 large or two small pancakes. Recipe can be doubled.
