Flatten out the chicken breast with plastic and a mallet.
Take all the seasonings except the chipotle and season one side of the chicken. Flip the chicken over and season that side with the chipotle.
Wrap the chicken breast in plastic wrap and refrigerate overnight.
Take what ever vegetables that you will be using, chop them up and boil them for approximately 10 mins. During this I put chicken bullion cups and rosemary in with the vegetables.
Take the chicken breast with the chipotle season side down and put some of the vegetables on the chicken and roll them up. Take soaked tooth picks and put them through the chicken to seal the chicken up. Once the chicken is sealed season the outside with chipotle seasoning again.
Put the chicken on a grill at approx. 300 degrees in indirect heat for about 30 mins.
Once your chicken is complete lightly put your favorite BBQ sauce on top and put back on the grill for another 10 minutes to caramelize the exterior.
