  1. Cook rice per directions.
  2. Add enough lemon juice to crushed avocado to make a paste.
  3. mix finely diced jalapeno pepper, finely diced olive with palmetto and 1/2 table spoon dill relish. Note go easy on the relish, it can over power the dish quickly.
  4. add all the ingredients together and mix. If you're going to use it as a dip, blend them smooth in a blender
  5. serve.
