"After reading about the history of the popular Red Velvet Cake, I wanted to try the version with Beets. Make one cake, a 2-layer cake, cupcakes or even cake pops. Beautiful color and tastes divine with or without frosting."

  1. Whisk all the ingredients except the flour and baking powder in a large bowl until well blended.
  2. In a separate bowl, sift the flour with the baking powder.
  3. Combine the dry into the wet a bit at a time until all is incorporated but without over mixing.
  4. Pour into parchment-lined pan or into lined muffin cups.
  5. Give a good tap of the pan to settle the batter so there won´t be any large bubble pockets in the final cake.
  6. Bake in a preheated 350ºF oven for about 35 minutes or until toothpick test comes out clean.
