  1. Cream oil and sugar. Add egg yolks beaten with 2 T warm water. Add carrots, sift dry ingredients and add to oil mixture. In a big bowl, beat egg whites and then fold into cake mixture.
  2. Bake in 3 9" round pans. Bake at 350 for 30 minutes.
