Healthy Creamy Chicken and Pasta

"Being on a diet, the words creamy and pasta usually are reserved for only my "cheat" days. I wanted to make something and not feel guilty about eating it, so I whipped this up in the kitchen. And it's delicious and very adaptive, change it up however you like! Has a nice little bite with the red pepper flakes added. This would also be fantastic with onion added."

Original recipe yields 4 servings

  1. Bring pot of water to a boil and add penne pasta. Boil for 10 minutes.
  2. In a large skillet, turn heat on high and add olive oil and garlic. Saute garlic a couple of minutes, just until brown and fragrant. Add chicken and mushrooms and stir to coat with garlic and olive oil.
  3. Once chicken is no longer pink in the middle (about 6 - 8 minutes) add can of cream of mushroom soup. Add 1/2 cup of water a little at a time, just enough to be lightly creamy, but not soupy. Stir so mushroom soup is coating everything evenly.
  4. Drain pasta and add to skillet, reduce to medium-low heat. Fold pasta in so it is coated by mixture. Add garlic salt and red pepper flakes as necessary.
  5. Remove from heat and serve.
