Season pork tenderloins with salt, cayenne pepper, and minced garlic and refrigerate covered for 30 to 60 minutes. Using a stove top smoker place wood chips in bottom of smoker and place pork on rack. Insert probe thermometer in center of pork. Close lit, laving about 1/2 inch open. Heat over high heat until you see wisps of smoke then close lit tightly and reduce heat to medium. Smoke until internal temperature reaches 140 degrees. Remove, let cool. If desired top with Blackberry BBQ sauce.
