Preheat grill to high. Oil grill grates well.Lightly brush olive oil on onion slices and pickle halves. Grill on high until onions are tender and pickles and onions have deep dark char marks. While vegetables are cooking, mix honey and mustard and pepper in a small bowl. During last few minutes of grilling brush vegetables with honey mustard. When vegetables are charred and glazed remove to cutting board. Allow to cool until easy to handle. Mince pickles and onions with a knife or pulse a few times in food proccessor. Stir remaining honey mustard into minced vegetables. Stir in pickle juice and salt to taste.
