  1. In a mini-mixer puree until all are nearly liquefied:
  2. 1/4 cup olive oil
  3. fresh garlic peeled
  4. fresh herb of choice
  5. dry seasonings
  6. In a large mixing bowl grate the cucumber. Use a second smaller bowl and squeeze out the extra moisture from each handful of grated cucumber so your dip won't become watery.
  7. Pour the oil and herb mixture over the grated and strained cucumber and stir together well with a fork.
  8. Let stand for 10-20 minutes before mixing in the yogurt, that allows the cucumber to absorb some of the herb flavor.
  9. Mix in the yogurt stirring thoroughly.
  10. Best when refrigerated for at least one hour before serving.
