  1. Add sweet potatoes pieces to boiling water, cook until soft then drain and set aside.
  2. In a medium sauce pan heat coconut milk, chicken brother, curry powder, peanut butter and rice vinegar until it comes to small boil. Set aside.
  3. In a large skillet over medium heat, add the oil and cook the onions until browning.
  4. Add the garlic and chicken cook until chicken is cooked through.
  5. Add the vegetables and cook until they begin to soften.
  6. Pour sauce into skillet and stir to combine all ingredients until sauce begins to boil slightly. Reduce heat and simmer until sauce thickens to desired consistency.
  7. Serve over rice
