"These are big, delicious, streusel topped blueberry muffins. The key to making them is to not over-stir the batter and not overfill the muffin pans."

  1. Preheat oven to 400 degrees.
  2. Line muffin tins or spray with olive oil spray.
  3. Mix flour, baking powder, white sugar, 1 tsp. cinnamon, and salt.
  4. In a seperate bowl, stir together buttermilk, egg, and vegetable oil. When combined pour into flour mixture and stir until half mixed (there will still be large clumps/streaks of flour.)
  5. Add blueberries and continue to gently stir until just mixed (do not over stir- once the flour disappears, stop mixing.)
  6. Pour into prepared muffin tins (3/4 full)
  7. To make streusel- combine butter, flour, 1/2 tsp. cinnamon, and brown sugar until crumbles form.
  8. Top muffins with the streusel.
  9. Bake for 20-30 minutes, until golden brown and a toothpick inserted in the center of the muffins comes out clean.
