  1. Combine all ingredients except blueberries.
  2. Mix well and then fold in blueberries.
  3. Note - batter will thicken as it sits; if it seems too thick add more liquid to achieve desired consistency.
  4. Coat skillet with oil or cooking spray and heat to medium-high.
  5. Drop batter in 1/4 cup spoonfuls into the skillet.
  6. Flatten slightly with the back of a spoon to achieve desired shape/thickness.
  7. Cook until slightly bubbly and dry around the edges, approximately 4 minutes.
  8. Flip and cook for approximately 3 more minutes until lightly browned and cooked through.
  9. Drizzle each pancake with agave nectar, honey, or maple syrup and blueberries (optional) when served.
