  1. Boil water and cook pasta according to package directions.
  2. In a small saucepan, combine minced garlic, olive oil, white wine, coconut milk, lemon juice, red pepper flakes, black pepper and salt. Simmer for 5-6 minutes. If the sauce is too tart for your liking, add 1 teaspoon of sugar or artificial sweetener.
  3. When pasta is al dente, reduce heat to low and drain water. Return to stove and add diced tomatoes, chopped green onions, basil, parsley, bean sprouts and shredded chicken. Stir to combine.
  4. Pour simmered sauce over the pasta and stir to combine.
  5. Serve pasta on a bed of arugula (or favorite greens).
  6. Sprinkle a little lemon zest on the top for some extra color and flavor.
