  1. Preheat oven to 375 degrees fahrenheit
  2. Grease a 12 cup muffin pan and set aside
  3. In a saucepan combine dried fruit with 1/2 cup of water and cook fruit until soft
  4. When cooled down put dried fruit mixture in a blender and pulse until well combined and then put aside in a small bowl
  5. In a medium mixing bowl put all the dry ingredients together and set aside
  6. In a larger bowl pour milk, eggs and oil together and whisk until smooth
  7. Add the dried fruit to the wet ingredients and mix until just incorporated
  8. Mix the dry ingredients with the wet a little bit at a time until it is all mixed together
  9. Add chopped walnuts and stir them in well until batter is smooth
  10. Pour batter into greased muffin cups filling 2/3 full
  11. Bake for approximately 20 minutes or until nicely browned
  12. Wait for 5 minutes and then remove to serving plate
