  1. Place flour into medium sized mixing bowl and add milk. Mix with wire mixer until smooth (kitchen aid or hand held mixers also work fine). Add salt, oil, and eggs (and optional vanilla and sugar). Mix until smooth.
  2. Heat 9" frying pan until hot. Grease the pan lightly with a basting brush dipped in oil, or with nonstick cooking spray.
  3. Pour 1/4 cup batter into the pan, and tilt pan spreading the batter evenly. Cook untill golden brown and then flip over cooking the other side. (Grease pan for each crepe)
  4. Spread with: jam of choice, fresh fruit, nutella, whipped cream, drizzled chocolate, sprinkle with sugar etc.
  5. Then roll like a jelly roll. Eat them while they are still hot!
