Combine the ground beef, red pepper, garlic, salt, and pepper in a large mixing bowl. Once combined, separate into 1/4 pound patties, making 16 patties. On eight of the patties, place 1 oz. of blue cheese in the center of each patty. Top each with the remaining patties, pressing the sides together so the cheese doesn't fall out. Grill for 30 mins. Top with your favorite veggies and condiments, and enjoy!
