  1. Heat oil in a stockpot, add onion and garlic. Cook until onion is translucent.
  2. Add sliced carrots and diced celery to pot. Saute until slightly softened, approximately 10 minutes.
  3. Add remaining soup ingredients, bring to a boil.
  4. Reduce heat, cover, and simmer for 1 hour or until lentils are softened. Stir occasionally.
  5. When fully cooked, remove bay leaves.
  6. Top each individual serving with 1 Tbsp. goat cheese and 1/2 cup baby arugula.
