  1. First prepare your favorite cornbread recipe. Allow cornbread to cool.
  2. Preheat oven to 350 degrees. Saute celery, onion and peppers until soft. Gently stir in your seafood. Stir until combined but careful do not cook too much for it will continue to bake in the oven.
  3. Crumble cornbread and seafood mixture. Fold in stock, one cup at a time until moist, but not watery.
  4. Place fish filets on a sprayed sheet pan. Scoop seafood stuffing mixture on top of each filet. Roll fish filet around stuffing mixture and place seam side down on sheet pan.
  5. Combine these ingredients and drizzle over top of fish filets.
  6. 1/2 stick melted butter
  7. 1/2 cup white wine
  8. 2 tbsp. lemon juice
  9. Sprinkle paprika on top of each fish filet and garnish with fresh lemon slices.
  10. Bake for 30 minutes at 350 degrees.
