Spray your glass casserole dish with cooking spray and then add your spinach ontop.
Sprinkle the garlic salt ontop of your spinach. Then you will arrange your lb of fish ontop, making sure not to overlap any pieces. Try to put the bigger pieces around the edge of the pan, smaller pieces in the inside. They will cook more even this way.
Sprinkle your fish with the lemon juice, along with the zest, dill, salt and pepper.
Combine both bread crumbs and cheddar cheese, spread evenly over the entire dish.
Cover your dish with foil and let it cook for about 12-15 minutes.
Take off your foil and finish cooking for an additional 5 - 8 minutes - until the top turns a little brown and crunches up a bit.
