"A light, flavorful, quick and easy gourmet dinner. My husband was impressed, and I eye balled most of it, but here's what I came up with. Has a little kick, but not enough to overwhelm the clean flavors of the fresh ingredients."

  1. Cook spaghetti until al dente
  2. saute yellow squash and zucchini, spinach, garlic and pine nuts in a small amt of olive oil
  3. saute shrimp in small amt of olive oil and 2 tsp of lemon juice until pink
  4. combine olive oil, parsley, red pepper flakes, salt & pepper and 2 tsp lemon juice and set aside.
  5. Drain spaghetti and put back in pot.
  6. Combine shrimp, vegetables and noodles in original pot. Pour olive oil dressing over contents and mix.
  7. plate and top with more pine nutes and shredded parmesan
