  1. Cook filling and season per your preference. In a bowl, mix filling with a bit of cheese and a bit of the sauce (just to add some moisture). Take a casserole dish and pour a small amount of the sauce on bottom of dish. Start stuffing tortillas with filling mixture rolling them. Place seam side down in casserole dish. Once you have filled the tortillas and placed them in the dish, pour the remaining sauce over the dish, top with cheese. Cover with foil and heat through (375 degrees) for 15-20 minutes. Take foil off and place back in oven to get a nice melt and crunch on the cheese (maybe another 10 minutes).Top with green onions, chilies, even olives if you want.
