  1. In a large saucepan, saute the onions in the olive oil until golden. Remove from heat.
  2. Process walnuts until coarsely ground and add to saucepan.
  3. Process beans with enough stock until choppy.
  4. Pour beans into the saucepan and add the remaining stock and seasonings.
  5. Season with about 1 teaspoon of salt.
  6. Over medium heat, bring to a simmering boil then turn heat to low.
  7. Let stand at a very low heat for 10-15 minutes.
  8. When ready to serve, ladle into bowls and sprinkle with fresh chopped cilantro and/or parsley.
