  1. Instructions: In a hot skillet add 1-2 tabelspoons of olive oil and sautee sliced up chicken breast. Once Chicken cooked thoroughly add cumin, paprika, chili powder and diced celantro to flavor and mix in with chicken. In another skillet add another 1 tablespoon of olive oil and sautee cut bell peppers, onions and mushrooms till peppers are soft. Place a bed of spinach on a plat and top with chicken and sauteed peppers. Add more diced cilantro and avacado to top it off. Optional add jalepenos and hot sauce to taste. If on a zone diet Black beans may be added to the salad or put fajita in a tortilla but watch your carb intake they add up quick.
