  1. Preheat oven to Convection 375 degrees F. Cut apples into small cubes. In a large bowl whisk together the baking powder, baking soda and cinnamon. In a separate bowl beat the egg. Melt the butter and let cool until warm then slowly whisk into the egg until creamy. In your large bowl whisk the lemon juice and vanilla in with your first three ingredients then add in the egg mixture and milk and cream then whisk. Continue to whisk in your sugar and flour then add in the apples. Pour your mixture into an 8 by 8 square pan and bake for 40-45 minutes.
