In a large mixing bowl, add all ingredients and mix well. If the mixture is too thick, add water or soy milk (without sugar) a little at a time until it is a cookie dough consistency.
Spray your cookie or jelly roll pan with either olive oil or canola spray.
You may either roll out the dough and use cookie cutters or you may just wish to press the dough into the pan dipping your spoon as needed into water to help prevent sticking to the spoon. Once your dough is in place, bake at 350 degrees for 30 to 45 minutes.
Let cool very well before placing into any kind of container or the cookies will mold very quickly. Refridgeration is recommended.
