  1. Bring shortening and egg to room temperature.
  2. Cream shortening and 1 c sugar. Beat in egg, then molasses.
  3. Sift dry ingredients and add to wet mixture. Stir to combine. Don't overmix.
  4. Place 1/4 c sugar in small bowl. Roll cookie dough into 1" balls then roll in sugar. Place on greased baking sheet and bake at 350F until crackled on top (roughly 10 min). They will look undercooked, but don't worry, and don't let them brown!
