  1. Remove skin and bones from chicken and shred and chop into bite-size pieces
  2. Saute onion, jalapeno pepper, and carrot in olive oil until soft
  3. Add chicken and then add taco seasoning and a little water (follow package directions)
  4. Add tomatoes, simmer for a few minutes
  5. Spread refried beans onto bottom of ungreased casserole dish
  6. Add five to six tortillas over beans, overlapping if necessary and sprinkle with cheese. Spread chicken mixture over the top, adding a layer of cheese again and then add second layer of tortillas and then spread a layer of the beans over top with a layer of cheese. Bake covered at 350 degrees for 30-35 minutes until heated through. Serve with a dollop of sour cream and a side salad.
