  1. Preheat oven to 340 degrees.
  2. In a large mixing bowl, mix sugar and oil
  3. Add eggs, pumpkin, and water.
  4. Stir well.
  5. In a medium bowl, mix all dried ingredients except nuts.
  6. Add dry mixture to pumpkin mixture.
  7. Stir in walnuts if desired.
  8. Spray 3 bread pans with cooking spray.
  9. Pour dough in bread pans.
  10. Bake 1 hour.
