  1. Preheat oven to 350.
  2. Take 2 of the cloves of garlic, mince finely and put in small bowl with softened butter. Salt/Pepper to taste and mix well. Take a knob of it and put under skin on breasts on both sides. Rub the remaining butter mix all over the outside. Set aside.
  3. Smash the rest of the garlic and place in dutch oven. Put the rest of the ingredients except the paprika in pan in a single layer.
  4. Place chicken on top, sprinkle the paprika liberally all over chicken. Salt/Pepper to taste.
  5. Bake for 1 hour covered. Remove lid, brown chicken for 25 minutes. Ensure temp from the meaty part of the thigh reads 165*F. Remove chicken and set on platter and cover with foil to rest. Turn up heat on oven to 425 and caramelize the vegetables for about 20 minutes more. Use broil for the last 5 minutes. Take out of oven, remove sprigs and bay leaf.
  6. Serve with crusty warm bread, salad and enjoy.
