Quick Roasted Tomato & Basil Bisque (plant based / vegan)


"Another one of my quick & easy pantry based dishes. Rich and filling. My kids dont even ask for grilled cheese with it! For a Mexican twist you can omit the basil and add 2 tsp cumin and 1 tsp cayenne. For the Mexican version I top with sliced avocado and warm homemade corn tortilla chips/strips."

  1. Combine all ingredients in a medium/large soup pot and heat on medium high until it starts bubbling. Remove from heat and purée with immersion blender until smooth and creamy. Laddle into bowls and top with croutons if desired.
