  1. Roast the chicken seasoned with salt and pepper, in a oven at about 450F on A wire rack to allow the fat to melt off of the chicken, cook the chicken until it reaches 165F internal temperature, And the chicken is nicely browned.
  2. In a frying pan fry add Olive oil, and fry the onions until browned.
  3. add tomatoes, wine, basel, oregano, rosemary, thyme, and chicken.
  4. Just prior to serving salt and pepper to taste.
