"After searching for a typical Italian Carbonara recipe I discovered this one, by Josée di Stasio, well known in Québec for her love of food. It's the best, and by far the simplest I've tried. In half an hour you can cook-up a meal that all the family will love, my kids are crazy about this recipe!!!"

  1. In a large casserole, cook the pasta in salted water according to makers directions.
  2. While the pasta is cooking, in a large pan, heat the olive oil and cook the Pancetta or bacon on medium-high heat for a few minutes. When it begins to gold, add the pasta water (to tender the meat), stir well and turn heat to low.
  3. In a large service bowl, mix the eggs and the Parmesan with a fork. Add pepper to taste.
  4. When the pasta is cooked, drain well and add them to the Pancetta/bacon pan and mix well. Then, add the pasta mixture to the eggs/Parmesan mixture and mix very well to coat all the pasta. You can top with more parmesan if desired. Serve while hot...and hmmmm, enjoy!!!
