"This is that great old recipe for banana bread when you have three bananas that you just don't want to waste. This is not the recipe for that dried out, over cooked that some relative brings over for a treat. This recipe is very most and rich. YOu need to bake it slow and long until it really is done in the middle. An old recipe of mine that I aquired and then tweeked."

  1. PREHEAT YOUR OVEN TO 425 COVECTION BAKE (400 NORMAL)
  2. Cream the shortening/margarine/butter and sugar, including brown until fully blended.
  3. Blend in the banana's
  4. Sift flour and baking soda and then add one large spoonful at a time to the batter.
  5. Add the nuts last and blend until evenly mixed.
  6. Spray 3 loaf pans with flour/oil spray and divide the batter between the three loaves. Fill to about 2/3 the depth of the pan.
  7. Place loaves on a baking sheet and place in the upper third of oven if covection, mid if normal oven.
  8. IMMEDIATE REDUCE THE HEAT TO 325 and continue baking for 90 minutes. Don't let the loaf fool you when because the top is brown. Banana bread bakes in a full surround and you want the middle done.
