  1. Heat vegetable oil over medium heat with cumin seeds until oil is hot (about 3-4 minutes). Be careful not to burn the cumin seeds.
  2. Quarter the tomatoes and place them in the pot. Stir for 3-4 minutes as the tomatoes break down.
  3. Place diced chicken, Shan masala, ginger-garlic paste, and water into pot.
  4. Stir, cover and let simmer for 15 minutes or until chicken is thoroughly cooked.
  5. Uncover and reduce for about 5 minutes or until desired thickness.
  6. Garnish curry with cilantro and serve over a bed of rice.
