Easy Tomato & Roasted Red Pepper Soup

"This is very filling and so rich and creamy. Always a hit at our house! I use the stewed tomatoes which have onions and basil in them and also the bottled roasted red peppers. The recipe is very forgiving, so you really cannot go wrong. Serve with grilled cheese if desired for an easy weeknight meal."

  1. Melt the butter over low heat and add garlic until well mixed. Be sure not to burn the garlic. Add the softened cream cheese and whisk until smooth.
  2. Add the cans of tomato soup, and whisk until mixed.
  3. In this step, you can "pulse the stewed tomatoes and roasted red peppers in a blender until smooth, or add the tomatoes chunky if you like them like that.
  4. Add the milk and stir well. Bring to a boil over medium heat and simmer for 10 to 15 minutes. You can add salt and pepper to taste if desired.
