Boil the chicken until cooked . Set aside to cool out of the water. Save the stock. Set aside.
Cover bottom of a large pan with oil and cook onions until translucent. Add parsley, tomatoes and spices. Cook until soft, about 8-12 minutes. Add chicken to the mix. Add stock (or water if you accidentally throw it out!) to cover the meat. Cook 1 hour on low until the flavor is blended with the meat.
*Note, spices vary immensely, so amounts are approx. Always cook to taste!
**You may add more cayenne or crushed red pepper to increase the heat to this dish
Add curry on top of rice and serve with fruit and veggies (pineapple, mango, pears, raisins, bananas, peaches, tomatoes, peppers--both spicy and bell, onion, etc) and top the mix with dried coconut. We always say the coconut is the snow on top of the mountain b/c inevitably when you eat this, it turns into a mountain on your plate! Enjoy :)
