Roasted Red Pepper and Feta Brushetta

  1. Mix first group of 9 ingredients after they've been chopped and sliced accordingly, then set aside to marinate.
  2. Brush bread slices lightly with olive oil. Broil on each side until lightly toasted.
  3. Top each toast slice with about 1 Tbsp of the mixture. Sprinkle with Parmesan cheese. Broil just until you see a few bubbles and light browning.
  4. Serve warm.
