  1. Chop the onion, carrot and garlic. Using a large soup pot, saute in oil over medium heat until soft. About 5 minutes.
  2. Add pinch of salt & pepper, tomato paste and red pepper flakes.
  3. Add escarole, broth, water, lentils, cannellini beans and bring to boil. Taste for flavor, and possibly add more salt and pepper.
  4. Once it's boiling, bring down to a simmer and add meatballs.
  5. Simmer for 1 hour or until the lentils are cooked through.
