1. Roll cookie dough into 1 inch balls. Press in to the bottom and halfway up the sides of 2 (13 cup) mini cheesecake pans. Bake for 12 minutes. Remove from oven. In pans mold cookies to form cups.
2. In a medium bowl, combine cream cheese, sour cream strawberry extract, and vanilla extract. Using a mixer at medium speed. Beat until combined.
3. In a separate mixing bowl and using a mixer at medium speed. Beat cream until soft, peaks form. Add confections sugar, and beat until stiff peaks form. Folding whipped cream mixture into cream cheese mixture, cover and chill.
4. Spoon or Pipe strawberry cream mixture into cookie cups, garnish with fresh strawberries, pink decorator’s sugar and mint if desired.
