Hearty Sausage Soup


"This is a recipe that I made on a snowy evening when we had next to nothing left in the house and didn't know what to make for dinner. This is extremely versatile, cheap to make, delicious to eat and very filling! Pair with some salad and bread, and you have a yummy meal!"

  1. Melt the butter and oil in a dutch oven or a very large pot over low heat. Add the onions, stir to coat them in the melted butter mixture. Cover the pot and let them steep for 15 minutes.
  2. Uncover the pot and add the pepper and sugar. The sugar helps the onions to caramelize. Cook the onions down for 25 to 35 minutes, stirring about every five minutes.
  3. Add garlic and cook for another 5 minutes.
  4. Add flour, stir, and cook for another 3 minutes.
  5. Add the wine, stirring to make a thick paste.
  6. Slowly add the broth, stirring to fully incorporate the paste with the broth.
  7. Mix in the tomato sauce, corn, carrots, spinach and rice. Simmer for 30 minutes.
  8. While the soup simmers, take a mixture of sweet and spicy sausage( the spicier you want your soup, the more spicy sausage you use), take it out of it's casing, and cook it into little crumbles.
  9. Add the cooked sausage to the soup and let it finish simmering.
  10. Enjoy!
