  1. Put the peas, ham hock, bacon, stock and water in a crock pot; cook on high for 3-4 hours. Stir and add water as needed.
  2. Add potatoes, carrots, leek, onion, garlic, and celery. Add water as needed to thin out the soup so it does not burn/stick to the crock pot. Cook on high for 2 hours.
  3. Add the spices to taste. Slice the sausage and add to soup, stir carefully. Cook on low 2 hours to incorporate spices and heat the sausage.
