Mexican Style Sausage Hash

  1. Place cut potatoes in large nonstick skillet. You can add one or two teaspoons of water if you would like. Cover skillet and place over medium heat, stirring on occasion.
  2. When potatoes are about half cooked, remove lid and add onions, sausage, and chiles. Stir to break up sausage. Flip every few minutes to make sure mixture is browned on all sides.
  3. When mixture is just browned, create 2 wells in mixture. Crack an egg into each well. Season dish with salt and pepper and cover. Cook until eggs have cooked to desired doneness.
  4. Garnish with salsa or hot sauce

I love this for a weekend breakfast because it has what I consider the necessary breakfast items: Eggs, Potatoes, and Sausage. The green chilies just add that something extra!
