Lightly spray large pot with cooking spray. Heat onion until clear. Add diced tomatoes (do not drain) and turn up burner to medium heat. Add each can of beans, stirring between cans until well mixed. Add zucchini and spices and mix well. Simmer on low heat for 30-45 minutes. If you prefer your chili spicy, you can add jalapenos or additional chili powder. You can garnish this recipe in any way you would normally serve meat chili!
