"The old lady who owned and made the soups at my favourite deli was retiring. I asked her for the recipe to one of my favourites. I made a few tweaks, it's DELICIOUS. The "old lady" referenced herself that way. I asked her why she was retiring, and she said "I'm an old lady, I'm tired of getting up early for work". Don't be so uptight and don't judge."

  1. Place the pinto beans into a small bowl. Cover with water and soak overnight. The next day drain the pinto beans and set aside.
  2. Melt the butter in a 6 quart stock pot. Add the onion and celery and sauté for 5 minutes. Add the garlic and sauté for 1 minute.
  3. Add the beef broth, tomato juice, sugar, and pinto beans. Bring to a boil and simmer for 1 hour and 15 minutes.
  4. Add the potatoes, carrots, oregano, and pepper. Simmer, covered, for 30 minutes.
  5. Set oven to broil. Place sausage on broiler pan and cook until brown. Cut into quarters then slice.
  6. Add the sausage and parsley. Cook for an additional 10 minutes or until all is tender.
