  1. Bring the chicken broth to a boil in a large stockpot.
  2. Add all vegetables, Italian seasoning, salt and pepper; return to a boil.
  3. Reduce heat to medium-low, cover and simmer for 20 minutes.
  4. Stir in chicken and tortellini and cook an additional 5-10 minutes.


Sounds like a pretty basic soup, but everytime I make it I am struck by how delicious it is.
