  1. Bake cake mix in 2 (9inch) pans, following directions on box, but substituting 3 large eggs for egg whites.
  2. Mix sugar into ricotta cheese with spatuala and fold in Rum.
  3. For syrup, add rum to the sugar water.
  4. Slice cooled layers into two, making 4 even layers.
  5. For 3 layers moisten with syrup and spread evenly with 1/3 of ricotta mixture.
  6. Frost top layer and sides with topping and use rest of topping to decorate top with rosettes and sprinkle with chocolate chips (optional).
