In a large blender or food processor, add the cleaned herbs (stems and all), the lime juice/zest, garlic, salt and a few turns of black pepper and pulse until chopped.
With the food processor running, stream in the olive oil and water until you have a smooth consistency. Taste and add additional salt or pepper if desired. IF the sauce is too thick you can thin it with additional lime juice, oil or water.
Use first press olive oil for the best flavor and really fresh herbs. Cover and chill until ready to use.
